It’s summertime and that means BBQ parties. This is a perfect dessert to make and bring to help your hosts out, especially if they’re chocolate lovers. I made these for the very first itme for my church home group and it was a resounding hit.

WARNING: if you’re allergic to nuts or peanut butter stay away from this one or substitute something appropriate.
What you’ll need:
- 1/2 cup butter or margarine, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 3/4 cup all-purpose flour
- 2 tablespoons cocoa powder
- 1/4 teaspoon baking powder
- 1 pinch salt
- 1/2 cup chopped pecans or walnuts
- 2 cups miniature marshmallows
- 1 cup semi-sweet chocolate chips
- 1 cup peanut butter
- 2 cups KELLOGG’S* RICE KRISPIES* cereal
Now, I doubled the recipe just because there were lots of people for one, but also because for a 9 x 13 pan the amounts just didn’t seem adequate.
First you’re going to make the bottom layer using the butter, sugar, vanilla, eggs, flour, cocoa, baking powder, salt, and nuts. I excluded the nuts when I made it. This batter you will bake at 350 F for about 15-20 minutes.
When it is done, take it out and sprinkle the marshmallows over the top. Do this while it is still hot. The recipe states mini marshmallows, but I think if all you have are the jumbos…go for it. Also, I used more than what was stated, what can I say? I like a lot of marchmallow. Then put it back in the oven for about 3 more minutes. The marshmallows will puff up really nicely and fill in all the empty spaces. Love it when they do that.
Now remove from the oven and let it cool.
While you’re waiting on the marshmallows and cake to cool, get out a sauce pan and combine the chocolate chips and the peanut butter. Cook over low heat until it all melts together. So yummy…I must warn youthat at this stage it’ll be hard to NOT put your finger into the pan to “taste test”….just sayin’.
Once it is all combined add the rice crispies and stir till evenly distributed through the mixture. Pour over the marshmallows and spread evenly.
Now refrigerate for a couple of hours so that everything sets and is cool.
When you’re ready to serve, just take it out and cut into bars or squares.
This dessert will be enought to satisfy any chocoholic. Promise.
